Ingredients:

  • 1.5 ounces Gin (80 proof)
  • 1.5 ounces Rhubarb Syrup (prepared)
  • 3 ounces Dry Prosecco or Sparkling Wine
  • 1 ounce Soda Water (club soda)
  • 1 slice Lemon or Rhubarb ribbon, for garnish

Instructions:

  1. Combine the gin and rhubarb syrup in a large wine glass or highball glass filled completely with ice.
  2. Top with Prosecco/sparkling wine and soda water.
  3. Stir gently once or twice to combine the ingredients without losing the carbonation.
  4. Garnish with a lemon slice or a ribbon of fresh rhubarb.
