Ingredients:
- 1 lb fresh strawberries with hulls intact
- 9 oz high-quality dark chocolate (60% cacao or higher), finely chopped
- 1 tsp refined coconut oil
Instructions:
- Wash the 1 lb of strawberries gently and pat them dry with paper towels until no moisture remains on the skin. Note: Even a single drop of water can cause the chocolate to seize.
- Use a serrated knife to finely chop the 9 oz of dark chocolate. Note: Small pieces melt faster and more evenly than large chunks.
- Line a large baking sheet with parchment paper. Ensure the surface is completely flat.
- Place the chocolate and 1 tsp of refined coconut oil in a microwave safe bowl.
- Microwave for 30 seconds, then stir thoroughly. Repeat until the mixture is 80% melted.
- Continue stirring outside the microwave until the residual heat melts the remaining bits until the liquid is glossy.
- Hold a strawberry by the green hull and submerge it into the chocolate. Rotate to coat all sides evenly.
- Lift the berry and shake it gently over the bowl until the heavy dripping stops.
- Lay the berry on the parchment paper. Allow it to sit undisturbed for 30 minutes.
- Place the tray in the fridge for 10 mins until the chocolate is firm to the touch.
