Ingredients:

  • 1 cup (225g) Cottage Cheese
  • 2 Large Eggs
  • 2 tablespoons (15g) All-Purpose Flour

Instructions:

  1. In a mixing bowl, combine cottage cheese, eggs, and flour.
  2. Whisk until the mixture is relatively smooth. A few small lumps of cottage cheese are okay. Do not overmix.
  3. Heat a lightly oiled or greased non-stick frying pan or griddle over medium heat.
  4. Pour 2-3 tablespoons of batter onto the hot pan for each pancake, leaving space between them.
  5. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form on the surface.
  6. Gently flip the pancakes with a spatula and cook for another 1-2 minutes, or until golden brown on the other side and cooked through.
  7. Serve hot, with your favorite toppings.
