Ingredients:

  • 2 medium sweet potatoes (approx. 1 lb / 450g)
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp sea salt

Instructions:

  1. Scrub the sweet potatoes thoroughly under cold water to remove all grit and pat them completely dry with a towel.
  2. Use a fork to prick the skin 5-6 times per potato to allow internal steam to escape.
  3. Rub each potato with 1/2 tbsp of olive oil and sprinkle with sea salt.
  4. Place the potatoes in the air fryer basket, ensuring they are not touching for optimal airflow.
  5. Air fry at 400°F (200°C) for 40 to 45 minutes, flipping the potatoes halfway through for a uniform exterior.
  6. Remove the potatoes from the air fryer and let them rest for 3-5 minutes to allow the core to finish softening.
  7. Slice lengthwise and fluff the interior with a fork until velvety.
