Ingredients:
- 2 medium sweet potatoes (approx. 1 lb / 450g)
- 1 tbsp extra-virgin olive oil
- 1/2 tsp sea salt
Instructions:
- Scrub the sweet potatoes thoroughly under cold water to remove all grit and pat them completely dry with a towel.
- Use a fork to prick the skin 5-6 times per potato to allow internal steam to escape.
- Rub each potato with 1/2 tbsp of olive oil and sprinkle with sea salt.
- Place the potatoes in the air fryer basket, ensuring they are not touching for optimal airflow.
- Air fry at 400°F (200°C) for 40 to 45 minutes, flipping the potatoes halfway through for a uniform exterior.
- Remove the potatoes from the air fryer and let them rest for 3-5 minutes to allow the core to finish softening.
- Slice lengthwise and fluff the interior with a fork until velvety.
