Ingredients:

  • lbs Russet or Yukon Gold Potatoes (about 4 medium)
  • Tbsp Olive Oil (or Avocado Oil)
  • Tbsp Cornstarch
  • tsp Smoked Paprika
  • /2 tsp Garlic Powder
  • /2 tsp Onion Powder
  • /4 tsp Kosher Salt (to taste)
  • /4 tsp Freshly Ground Black Pepper

Instructions:

  1. Wash and scrub the potatoes thoroughly. Do not peel them. Cut each potato lengthwise into 8 equal wedges.
  2. Place the cut wedges into a large bowl, cover completely with cold water, and let them soak for at least 10 minutes to draw out excess starch.
  3. Drain the potatoes completely. Lay them out on a clean kitchen towel or paper towels and pat them bone dry.
  4. In a small bowl, whisk together the cornstarch, smoked paprika, garlic powder, onion powder, salt, and pepper to create the seasoning mix.
  5. Place the dried wedges back into the large bowl. Drizzle with olive oil and toss until lightly coated. Sprinkle the seasoning mix over the potatoes and toss again until every wedge has a fine, dusty coating.
  6. Preheat the air fryer to 380°F (195°C). Arrange the seasoned wedges in a single layer in the air fryer basket. Do not overcrowd; work in batches if necessary.
  7. Cook for 18–22 minutes, pausing halfway (around the 10-minute mark) to open the basket and give them a good shake to ensure even browning.
  8. Check for doneness: wedges should be deep golden brown and crisp on the outside, and easily pierced with a fork. Serve immediately.
