Ingredients:

  • 2 dried ancho chiles, stemmed and seeded (approximately 20g)
  • 1 cup (240 ml) hot water
  • 1 cup (240 ml) good quality mayonnaise
  • 2 cloves garlic, minced (approximately 6g)
  • 1 tablespoon (15 ml) lime juice, freshly squeezed
  • 1-2 teaspoons Ancho Chile Paste (or 1-2 teaspoons ancho chile powder)
  • 1/4 teaspoon smoked paprika (1g)
  • 1/4 teaspoon kosher salt (1.5g), or to taste
  • 1/8 teaspoon freshly ground black pepper (0.3g), or to taste

Instructions:

  1. Rehydrate the chiles in hot water until softened. Blend chiles and some of the soaking water into a smooth paste (if using dried chiles).
  2. In a mixing bowl, add the mayonnaise, minced garlic, lime juice, ancho chile paste (or powder), smoked paprika, salt, and pepper.
  3. Whisk all ingredients together until well combined and smooth.
  4. Taste the ancho aioli and adjust the seasoning as needed (more salt, pepper, or lime juice).
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled and enjoy!
