Ingredients:
- 1 large Apple (Granny Smith or Braeburn), peeled, cored, and finely diced
- 1 tsp Unsalted Butter or Coconut Oil
- 1 Tbsp Maple Syrup (Grade A Dark) or light brown sugar
- 1/2 tsp Ground Cinnamon
- 2 Tbsp Water
- Pinch of Sea Salt
- 1 cup Old-Fashioned Rolled Oats (not instant)
- 1 cup Milk (Dairy or Non-Dairy)
- 1/2 cup Plain Greek Yogurt (2% or 5%)
- 1 Tbsp Chia Seeds
- 1–2 Tbsp Maple Syrup or Honey
- 1/2 tsp Vanilla Extract
- 1/4 tsp Ground Nutmeg
- 1/8 tsp Ground Allspice (Optional)
Instructions:
- Sauté the Apples: Melt the butter/coconut oil in a small saucepan over medium heat. Add the diced apples, cinnamon, and the pinch of salt. Cook for 2 minutes, stirring often.
- Soften and Caramelise: Add the 2 Tbsp of water and the maple syrup. Reduce the heat to low, cover the pan, and steam/simmer for 3–4 minutes until the apples are fork-tender but still hold their shape. Remove from heat.
- Cool: Allow the compote to cool completely. Divide the compote evenly into the bottom of your two serving jars.
- Combine Dry Ingredients: In a medium bowl, combine the rolled oats, chia seeds, nutmeg, and allspice. Give them a quick stir.
- Combine Wet Ingredients: Add the milk, Greek yogurt, maple syrup, and vanilla extract to the bowl.
- Whisk Thoroughly: Whisk the mixture vigorously for 30–60 seconds until the chia seeds and spices are evenly dispersed and the mixture is uniform and smooth.
- Layer the Oats: Pour the oats mixture evenly over the cooled apple compote in the two jars. Leave about 1/2 inch of headspace at the top of the jar.
- Seal and Chill: Seal the jars tightly. Place the oats in the refrigerator and chill for a minimum of 6 hours, or preferably overnight, to allow the oats to fully absorb the liquid and the chia seeds to gel.
- Check Texture: Before serving, check the texture. If the oats are too thick, stir in a splash (1-2 Tbsp) of extra milk until you reach your desired consistency.
- Garnish and Enjoy: Serve cold, topped with suggested garnishes like chopped nuts or extra yogurt.
