Ingredients:

  • 1 ½ lbs boneless, skinless chicken thighs
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • ½ cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 2 tablespoons coconut milk
  • 1 tablespoon brown sugar
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • Water for thinning
  • Wooden skewers (soaked in water for 30 minutes)
  • Fresh cilantro (for garnish)

Instructions:

  1. In a bowl, combine garlic, soy sauce, fish sauce, brown sugar, coriander, cumin, turmeric, vegetable oil, and lime juice.
  2. Cut chicken into bite-sized pieces and add to the marinade. Mix well to coat. Cover and refrigerate for at least 30 minutes.
  3. In another bowl, whisk together peanut butter, soy sauce, coconut milk, brown sugar, lime juice, and garlic. Thin with water to desired consistency.
  4. Preheat the grill to medium heat. Thread marinated chicken onto soaked wooden skewers.
  5. Grill skewers for 10-12 minutes, turning occasionally, until golden brown and cooked through.
  6. Arrange skewers on a platter, drizzle with peanut sauce, and garnish with cilantro.
