Ingredients:
- 1 ½ lbs boneless, skinless chicken thighs
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon turmeric
- 1 tablespoon vegetable oil
- Juice of 1 lime
- ½ cup creamy peanut butter
- 1 tablespoon soy sauce
- 2 tablespoons coconut milk
- 1 tablespoon brown sugar
- 1 teaspoon lime juice
- 1 clove garlic, minced
- Water for thinning
- Wooden skewers (soaked in water for 30 minutes)
- Fresh cilantro (for garnish)
Instructions:
- In a bowl, combine garlic, soy sauce, fish sauce, brown sugar, coriander, cumin, turmeric, vegetable oil, and lime juice.
- Cut chicken into bite-sized pieces and add to the marinade. Mix well to coat. Cover and refrigerate for at least 30 minutes.
- In another bowl, whisk together peanut butter, soy sauce, coconut milk, brown sugar, lime juice, and garlic. Thin with water to desired consistency.
- Preheat the grill to medium heat. Thread marinated chicken onto soaked wooden skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until golden brown and cooked through.
- Arrange skewers on a platter, drizzle with peanut sauce, and garnish with cilantro.
