Ingredients:

  • 2 tablespoons reserved ham drippings (approximately from frying 4-6 slices of country ham) (30ml)
  • 1 cup brewed strong coffee (240ml)
  • 1 tablespoon unsalted butter (14g) (Optional, for added richness)
  • Pinch of black pepper (Optional)
  • Salt to taste (Use sparingly, as ham drippings are already salty)

Instructions:

  1. Fry country ham slices in a skillet until crispy. Remove ham and set aside, reserving the ham drippings in the skillet.
  2. Over medium heat, slowly pour in the brewed coffee into the skillet with the ham drippings. Be careful; it may splatter!
  3. Bring the mixture to a simmer and cook for 5-7 minutes, or until the gravy has slightly thickened and reduced by about one-third. Stir occasionally.
  4. Remove from heat and stir in the butter until melted and incorporated. This adds richness and shine (Optional).
  5. Season with pepper to taste. Add salt very sparingly, if needed, as the ham drippings are naturally salty. Serve immediately.
