Ingredients:
- 2 tablespoons reserved ham drippings (approximately from frying 4-6 slices of country ham) (30ml)
- 1 cup brewed strong coffee (240ml)
- 1 tablespoon unsalted butter (14g) (Optional, for added richness)
- Pinch of black pepper (Optional)
- Salt to taste (Use sparingly, as ham drippings are already salty)
Instructions:
- Fry country ham slices in a skillet until crispy. Remove ham and set aside, reserving the ham drippings in the skillet.
- Over medium heat, slowly pour in the brewed coffee into the skillet with the ham drippings. Be careful; it may splatter!
- Bring the mixture to a simmer and cook for 5-7 minutes, or until the gravy has slightly thickened and reduced by about one-third. Stir occasionally.
- Remove from heat and stir in the butter until melted and incorporated. This adds richness and shine (Optional).
- Season with pepper to taste. Add salt very sparingly, if needed, as the ham drippings are naturally salty. Serve immediately.
