Ingredients:
- 4 medium ripe tomatoes (about 1 lb / 450 g)
- 2 medium white onions, quartered
- 1-2 fresh serrano or jalapeño chiles, stems removed
- 3 cloves garlic, peeled
- 2 tablespoons fresh lime juice (about 1 lime)
- ½ cup fresh cilantro leaves, packed
- Salt, to taste
Instructions:
- Preheat the oven to 425°F (220°C). Place the tomatoes, onions, chiles, and garlic on a baking sheet. Roast for 10-15 minutes, or until the tomatoes are blistered and slightly charred.
- Allow the roasted vegetables to cool slightly. In a blender or food processor, combine the roasted vegetables, lime juice, cilantro, and salt. Blend until smooth, adjusting texture to preference (chunky or smooth).
- Taste the salsa and adjust seasoning with more salt or lime juice as needed.
- Transfer the salsa to a serving bowl and enjoy fresh with your favorite dishes.
