Ingredients:

  • 4 medium ripe tomatoes (about 1 lb / 450 g)
  • 2 medium white onions, quartered
  • 1-2 fresh serrano or jalapeño chiles, stems removed
  • 3 cloves garlic, peeled
  • 2 tablespoons fresh lime juice (about 1 lime)
  • ½ cup fresh cilantro leaves, packed
  • Salt, to taste

Instructions:

  1. Preheat the oven to 425°F (220°C). Place the tomatoes, onions, chiles, and garlic on a baking sheet. Roast for 10-15 minutes, or until the tomatoes are blistered and slightly charred.
  2. Allow the roasted vegetables to cool slightly. In a blender or food processor, combine the roasted vegetables, lime juice, cilantro, and salt. Blend until smooth, adjusting texture to preference (chunky or smooth).
  3. Taste the salsa and adjust seasoning with more salt or lime juice as needed.
  4. Transfer the salsa to a serving bowl and enjoy fresh with your favorite dishes.
