Ingredients:

  • 1 large ripe avocado (approx. 150g), pitted and peeled
  • 1/2 cup dark chocolate chips, 70% cacao (90g)
  • 2 tablespoons unsweetened cacao powder (15g)
  • 1.5 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 pinch sea salt

Instructions:

  1. Place the pitted and peeled ripe avocado in a food processor. Pulse until completely smooth with no visible green chunks.
  2. Melt the dark chocolate chips using a double boiler or a microwave in 20-second intervals until glossy. Allow to cool for 2 minutes.
  3. Add the melted chocolate, cacao powder, maple syrup, vanilla extract, and sea salt to the food processor. Process until the mixture is uniform and resembles a thick chocolate ganache.
  4. Transfer the chocolate mixture to a shallow bowl, cover, and refrigerate for 30 to 45 minutes until firm enough to handle.
  5. Using a small cookie scoop, portion out 1-tablespoon rounds and roll them quickly between your palms into spheres.
  6. Roll each truffle in extra cacao powder or your choice of optional coatings like crushed nuts or coconut.
  7. Chill for an additional 10 minutes before serving to ensure the structure is fully set.
