Ingredients:

  • 2 slices of whole-grain bread (about 70g each)
  • 1 ripe avocado (about 200g), halved and pitted
  • 1 ripe mango (about 200g), peeled and diced
  • 1 lime (1 tbsp juice, about 15ml)
  • Salt and black pepper, to taste
  • Red pepper flakes, to taste
  • Fresh cilantro or mint leaves, for garnish

Instructions:

  1. Toast the slices of whole-grain bread until golden brown and crispy.
  2. In a bowl, scoop out the avocado flesh and mash it with a fork until smooth, adding lime juice, salt, and pepper to taste.
  3. Dice the ripe mango and set it aside in a bowl.
  4. Spread a generous layer of the mashed avocado on each slice of toast and top with diced mango, evenly distributing it.
  5. Sprinkle with red pepper flakes and additional salt and pepper, if desired, and garnish with cilantro or mint leaves.
