Ingredients:
- 2 slices of whole-grain bread (about 70g each)
- 1 ripe avocado (about 200g), halved and pitted
- 1 ripe mango (about 200g), peeled and diced
- 1 lime (1 tbsp juice, about 15ml)
- Salt and black pepper, to taste
- Red pepper flakes, to taste
- Fresh cilantro or mint leaves, for garnish
Instructions:
- Toast the slices of whole-grain bread until golden brown and crispy.
- In a bowl, scoop out the avocado flesh and mash it with a fork until smooth, adding lime juice, salt, and pepper to taste.
- Dice the ripe mango and set it aside in a bowl.
- Spread a generous layer of the mashed avocado on each slice of toast and top with diced mango, evenly distributing it.
- Sprinkle with red pepper flakes and additional salt and pepper, if desired, and garnish with cilantro or mint leaves.
