Ingredients:

  • 1 slice sourdough bread (approximately 1 inch thick)
  • 1/2 ripe avocado
  • 1/2 teaspoon everything bagel seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Squeeze of fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon olive oil
  • 1 large egg
  • 1 teaspoon white vinegar
  • Pinch of salt

Instructions:

  1. Halve the avocado, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until desired consistency is reached. Season with everything bagel seasoning, red pepper flakes (if using), lemon juice, salt, and pepper.
  2. Toast the sourdough slice to your desired level of doneness. Drizzle with olive oil while warm.
  3. Fill the pot with about 3 inches of water and bring to a gentle simmer. Add the vinegar and salt. Crack the egg into a small bowl. Create a gentle whirlpool in the simmering water with a spoon. Gently slide the egg into the whirlpool. Cook for 3-4 minutes, or until the white is set but the yolk is still runny.
  4. Spread the mashed avocado evenly over the toasted sourdough.
  5. Carefully remove the poached egg from the water with a slotted spoon. Let excess water drain off. Gently place the poached egg on top of the avocado toast.
  6. Serve immediately. Season with extra everything bagel seasoning and pepper.
