Ingredients:
- 1 slice sourdough bread (approximately 1 inch thick)
- 1/2 ripe avocado
- 1/2 teaspoon everything bagel seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Squeeze of fresh lemon juice
- Salt and freshly ground black pepper to taste
- 1 teaspoon olive oil
- 1 large egg
- 1 teaspoon white vinegar
- Pinch of salt
Instructions:
- Halve the avocado, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until desired consistency is reached. Season with everything bagel seasoning, red pepper flakes (if using), lemon juice, salt, and pepper.
- Toast the sourdough slice to your desired level of doneness. Drizzle with olive oil while warm.
- Fill the pot with about 3 inches of water and bring to a gentle simmer. Add the vinegar and salt. Crack the egg into a small bowl. Create a gentle whirlpool in the simmering water with a spoon. Gently slide the egg into the whirlpool. Cook for 3-4 minutes, or until the white is set but the yolk is still runny.
- Spread the mashed avocado evenly over the toasted sourdough.
- Carefully remove the poached egg from the water with a slotted spoon. Let excess water drain off. Gently place the poached egg on top of the avocado toast.
- Serve immediately. Season with extra everything bagel seasoning and pepper.
