Ingredients:
- 4 medium apples, peeled, cored, and diced (about 4 cups or 600g)
- ½ cup (100g) granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 ½ cups (180g) all-purpose flour
- ½ cup (100g) brown sugar, packed
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup (115g) unsalted butter, melted
- 1 large egg
- ¾ cup (180ml) milk
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven: Set oven to 350°F (175°C).
- Prepare the Apple Filling: In a bowl, combine diced apples, granulated sugar, cinnamon, and lemon juice. Toss to coat evenly.
- Prepare the Muffin Topping: In another bowl, whisk together flour, brown sugar, baking powder, and salt. In a separate bowl, mix melted butter, egg, milk, and vanilla until well combined. Fold the wet ingredients into the dry ingredients until just combined.
- Assemble: Spread the apple mixture in the baking dish, then dollop the muffin batter over the top, spreading lightly but leaving some apple exposed.
- Bake: Bake for 25 minutes or until the muffin top is golden brown and a toothpick inserted comes out clean.
- Serve: Allow to cool slightly before serving warm. Enjoy it as is or with a scoop of vanilla ice cream!
