Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (100g) whole wheat flour
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk
  • 1 cup (150g) fresh blueberries (or frozen)
  • ½ cup (60g) all-purpose flour (for crumble)
  • ¼ cup (50g) granulated sugar (for crumble)
  • ¼ cup (50g) brown sugar, packed (for crumble)
  • ½ teaspoon ground cinnamon (for crumble)
  • ¼ cup (57g) unsalted butter, softened (for crumble)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the baking pan.
  2. In a large bowl, combine all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. In another bowl, mix melted butter, eggs, vanilla extract, and buttermilk until fully combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in blueberries.
  5. In a small bowl, combine flour, granulated sugar, brown sugar, and cinnamon. Cut in softened butter until the mixture resembles coarse crumbs.
  6. Pour the batter into the greased baking pan, smoothing it with a spatula.
  7. Evenly sprinkle the crumble topping over the batter.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly in the pan before cutting into squares. Enjoy warm!
