- 1 cup (100g) whole wheat flour
- ½ cup (100g) granulated sugar
- ½ cup (100g) brown sugar, packed
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) buttermilk
- 1 cup (150g) fresh blueberries (or frozen)
- ½ cup (60g) all-purpose flour (for crumble)
- ¼ cup (50g) granulated sugar (for crumble)
- ¼ cup (50g) brown sugar, packed (for crumble)
- ½ teaspoon ground cinnamon (for crumble)
- ¼ cup (57g) unsalted butter, softened (for crumble)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the baking pan.
- In a large bowl, combine all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk until well blended.
- In another bowl, mix melted butter, eggs, vanilla extract, and buttermilk until fully combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in blueberries.
- In a small bowl, combine flour, granulated sugar, brown sugar, and cinnamon. Cut in softened butter until the mixture resembles coarse crumbs.
- Pour the batter into the greased baking pan, smoothing it with a spatula.
- Evenly sprinkle the crumble topping over the batter.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly in the pan before cutting into squares. Enjoy warm!
