Ingredients:

  • 1 and ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • ½ cup (120ml) whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup (150g) fresh or frozen cherries, pitted and halved
  • ½ cup (90g) semi-sweet chocolate chips
  • Powdered sugar for dusting (optional)
  • Whipped cream (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour the cake pan, or line it with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  7. Gently fold in the halved cherries and chocolate chips until evenly distributed.
  8. Pour the batter into the prepared cake pan and spread evenly.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. Optionally dust with powdered sugar or serve with whipped cream before slicing.
