Ingredients:
- 1 and ½ cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- ½ cup (120ml) whole milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup (150g) fresh or frozen cherries, pitted and halved
- ½ cup (90g) semi-sweet chocolate chips
- Powdered sugar for dusting (optional)
- Whipped cream (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease and flour the cake pan, or line it with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Gently fold in the halved cherries and chocolate chips until evenly distributed.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Optionally dust with powdered sugar or serve with whipped cream before slicing.
