Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 8 oz each)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the thickest part of the breast until the meat is a uniform 2 cm thickness.
  3. Remove the plastic wrap and pat the chicken breasts completely dry with paper towels to ensure a golden crust.
  4. In a small bowl, combine the sea salt, black pepper, garlic powder, smoked paprika, and dried oregano.
  5. Drizzle the chicken with olive oil and rub the spice mixture evenly over both sides of each breast.
  6. Arrange the chicken on the prepared baking sheet, ensuring the pieces are not touching.
  7. Bake in the center rack for 18–22 minutes. Use an instant-read digital meat thermometer to verify the internal temperature has reached 165°F (74°C).
  8. Remove from the oven and transfer to a plate or cutting board. Tent loosely with foil and let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
