Ingredients:
- 4 boneless, skinless chicken breasts (approx. 8 oz each)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 0.5 teaspoon cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried oregano
Instructions:
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
- Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the thickest part of the breast until the meat is a uniform 2 cm thickness.
- Remove the plastic wrap and pat the chicken breasts completely dry with paper towels to ensure a golden crust.
- In a small bowl, combine the sea salt, black pepper, garlic powder, smoked paprika, and dried oregano.
- Drizzle the chicken with olive oil and rub the spice mixture evenly over both sides of each breast.
- Arrange the chicken on the prepared baking sheet, ensuring the pieces are not touching.
- Bake in the center rack for 18–22 minutes. Use an instant-read digital meat thermometer to verify the internal temperature has reached 165°F (74°C).
- Remove from the oven and transfer to a plate or cutting board. Tent loosely with foil and let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
