Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs or digestive biscuits
  • ½ cup (115g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • 4 (8 oz) packages (900g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 cup (150g) mixed berries (strawberries, blueberries, raspberries)
  • 1 cup (150g) kiwi, diced
  • ¼ cup (30g) powdered sugar (for dusting)
  • Fresh mint leaves (optional, for garnish)

Instructions:

  1. Preheat oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly combined.
  2. Press crust mixture into the bottom of a springform pan. Bake for 10 minutes.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until incorporated.
  4. Add eggs one at a time, mixing on low speed after each addition. Stir in flour and cinnamon until just combined.
  5. Pour the filling into the crust and smooth the top. Bake for 45-55 minutes, or until the center is set but slightly jiggly.
  6. Turn off the oven, crack the door, and let the cheesecake cool for an hour.
  7. Remove from the oven and refrigerate for at least 4 hours or overnight.
  8. Once chilled, gently remove from the springform pan and place on a serving platter.
  9. Arrange mixed berries and kiwi to resemble ornaments on the tree. Dust the top with powdered sugar and garnish with mint leaves, if desired.
