Ingredients:
- 1 ½ cups (150g) graham cracker crumbs or digestive biscuits
- ½ cup (115g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
- 4 (8 oz) packages (900g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1 cup (150g) mixed berries (strawberries, blueberries, raspberries)
- 1 cup (150g) kiwi, diced
- ¼ cup (30g) powdered sugar (for dusting)
- Fresh mint leaves (optional, for garnish)
Instructions:
- Preheat oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly combined.
- Press crust mixture into the bottom of a springform pan. Bake for 10 minutes.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until incorporated.
- Add eggs one at a time, mixing on low speed after each addition. Stir in flour and cinnamon until just combined.
- Pour the filling into the crust and smooth the top. Bake for 45-55 minutes, or until the center is set but slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool for an hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight.
- Once chilled, gently remove from the springform pan and place on a serving platter.
- Arrange mixed berries and kiwi to resemble ornaments on the tree. Dust the top with powdered sugar and garnish with mint leaves, if desired.
