Ingredients:
- 4 cups all-purpose flour (480g)
- 1/2 cup granulated sugar (100g)
- 1 packet (2 1/4 teaspoons) instant yeast (7g)
- 1 teaspoon salt
- 1 cup whole milk, warmed (240ml)
- 1/3 cup unsalted butter, melted (75g)
- 2 large eggs
- 1/2 cup unsalted butter, softened (113g)
- 1 cup brown sugar, packed (200g)
- 2 tablespoons ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- 4 oz cream cheese, softened (113g)
- 1/4 cup unsalted butter, softened (57g)
- 1 cup powdered sugar (120g)
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (as needed for consistency)
Instructions:
- In a large bowl, whisk together flour, sugar, instant yeast, and salt.
- In a separate bowl, combine warmed milk and melted butter, then whisk in eggs.
- Add wet ingredients to dry ingredients; mix until a dough forms.
- Transfer dough to a floured surface; knead for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover with a damp towel, and let rise in a warm place for about 1 hour, or until doubled in size.
- In a bowl, mix softened butter, brown sugar, cinnamon, and nutmeg until well combined.
- Roll out the dough into a rectangle. Spread the filling evenly over the dough, leaving a 1-inch border.
- Roll the dough tightly into a log; slice into 12 equal pieces.
- Arrange the buns in a greased baking dish. Cover and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C), then bake buns for 25-30 minutes, or until golden brown.
- Beat cream cheese and butter until creamy. Gradually mix in powdered sugar and vanilla, adding milk as needed to reach desired consistency.
- Allow buns to cool slightly before spreading frosting on top. Serve warm.
