Ingredients:
- 1 cup (240g) cottage cheese (preferably low-fat)
- 3 ripe bananas, mashed (about 1 ½ cups or 360g)
- 2 large eggs, at room temperature
- ½ cup (100g) granulated sugar
- ½ cup (120ml) vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1½ cups (185g) all-purpose flour
Instructions:
- Preheat the oven to 350°F (175°C) and prepare the loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, whisk together the cottage cheese, mashed bananas, eggs, sugar, oil, and vanilla until well combined.
- In another bowl, mix the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, folding gently with a spatula until just combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
