Ingredients:

  • 3 medium ripe bananas (about 1½ cups mashed, or 450g)
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1½ cups (190g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon
  • 1 tablespoon (15g) unsalted butter, softened (for cinnamon swirl)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the loaf pan with butter or line with parchment paper.
  3. In a bowl, mash the ripe bananas until smooth.
  4. In a mixing bowl, mix the melted butter with sugar and mix well. Add eggs and vanilla extract, whisking until well combined.
  5. Stir in mashed bananas. In a separate bowl, mix flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  6. In a small bowl, combine sugar and cinnamon for the swirl.
  7. Pour half the batter into the prepared pan. Sprinkle half the cinnamon mixture over the batter. Add the remaining batter, followed by the rest of the cinnamon sugar.
  8. Using a knife, gently swirl the batter and cinnamon together to create a marbled effect.
  9. Place in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
