Ingredients:
- 3 medium ripe bananas (about 1½ cups mashed, or 450g)
- ½ cup (115g) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1½ cups (190g) all-purpose flour
- 2 tablespoons (25g) granulated sugar (for cinnamon swirl)
- 1 tablespoon ground cinnamon
- 1 tablespoon (15g) unsalted butter, softened (for cinnamon swirl)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the loaf pan with butter or line with parchment paper.
- In a bowl, mash the ripe bananas until smooth.
- In a mixing bowl, mix the melted butter with sugar and mix well. Add eggs and vanilla extract, whisking until well combined.
- Stir in mashed bananas. In a separate bowl, mix flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
- In a small bowl, combine sugar and cinnamon for the swirl.
- Pour half the batter into the prepared pan. Sprinkle half the cinnamon mixture over the batter. Add the remaining batter, followed by the rest of the cinnamon sugar.
- Using a knife, gently swirl the batter and cinnamon together to create a marbled effect.
- Place in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
