Ingredients:

  • 3 ripe bananas (mashed)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1/2 cup granulated sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 and 1/2 cups all-purpose flour
  • Optional Add-ins: - 3/4 cup chopped walnuts or pecans - 3/4 cup chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with a little vegetable oil or line it with parchment paper for easier removal.
  2. In a large mixing bowl
  3. Add the vegetable oil, sugar, beaten egg, and vanilla extract into the bowl with mashed bananas. Mix well until thoroughly combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon (if using).
