Ingredients:

  • 4 large English muffins, split (about 280g)
  • 4 tablespoons unsalted butter, melted (60g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 6 large eggs (approx. 300g)
  • 1 cup heavy cream (240ml)
  • 1 cup shredded cheddar cheese (100g)
  • 1 cup chopped fresh spinach (30g)
  • 1/2 cup diced bell pepper (75g)
  • 1/4 cup chopped onion (40g)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). In a mixing bowl, combine melted butter, garlic powder, and salt.
  2. Crush the English muffins into coarse crumbs and mix with the butter mixture until evenly coated. Press the mixture firmly into the bottom and up the sides of the pie dish to form an even crust.
  3. Bake the crust for about 10 minutes until lightly golden. Remove from oven and set aside.
  4. In a mixing bowl, whisk together the eggs and heavy cream until fully blended. Stir in the cheese, spinach, bell pepper, onion, black pepper, and nutmeg if using.
  5. Pour the filling mixture into the pre-baked English muffin crust, spreading it evenly.
  6. Return the quiche to the oven and bake for 30-35 minutes, or until the filling is set and the top is lightly browned. A knife inserted into the center should come out clean.
  7. Allow the quiche to cool for about 10 minutes before slicing and serving.
