Ingredients:
- 2 cups all-purpose flour
- 3/4 cup warm milk
- 1/2 cup water
- 1 packet active dry yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1/4 cup cream cheese, softened
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 1 teaspoon fresh dill, chopped
- 1 ripe avocado
- 1 tablespoon lime juice
- 1/4 teaspoon cayenne pepper
- 1 cup diced tomatoes
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
Instructions:
- In a small bowl, combine warm milk, sugar, and yeast. Let sit until frothy (about 5-10 minutes).
- In a large bowl, whisk together flour and salt. Pour in yeast mixture and melted butter; mix until combined.
- Knead on a floured surface for about 5-7 minutes until smooth.
- Place dough in a greased bowl, cover with a cloth, and let rise until doubled in size (about 1 hour).
- Punch down the dough and roll it out to about 1 inch thick. Cut into rounds and place on a parchment-lined baking sheet.
- Cover with a cloth and let rise for another 30 minutes.
- Preheat skillet over medium-low heat. Cook muffins for about 5-7 minutes on each side until golden brown.
- Transfer to a cooling rack and allow to cool slightly before slicing.
- While muffins cool, prepare desired zesty toppings.
- Slice muffins and generously spread on zesty toppings of choice.
