Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup warm milk
  • 1/2 cup water
  • 1 packet active dry yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon fresh dill, chopped
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 teaspoon cayenne pepper
  • 1 cup diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar

Instructions:

  1. In a small bowl, combine warm milk, sugar, and yeast. Let sit until frothy (about 5-10 minutes).
  2. In a large bowl, whisk together flour and salt. Pour in yeast mixture and melted butter; mix until combined.
  3. Knead on a floured surface for about 5-7 minutes until smooth.
  4. Place dough in a greased bowl, cover with a cloth, and let rise until doubled in size (about 1 hour).
  5. Punch down the dough and roll it out to about 1 inch thick. Cut into rounds and place on a parchment-lined baking sheet.
  6. Cover with a cloth and let rise for another 30 minutes.
  7. Preheat skillet over medium-low heat. Cook muffins for about 5-7 minutes on each side until golden brown.
  8. Transfer to a cooling rack and allow to cool slightly before slicing.
  9. While muffins cool, prepare desired zesty toppings.
  10. Slice muffins and generously spread on zesty toppings of choice.
