Ingredients:

  • 1 can (15 oz) of garbanzo beans (chickpeas), drained and rinsed
  • 3 large eggs
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • (Optional) 1/2 cup chocolate chips (dairy-free if desired)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with cooking spray or line it with parchment paper.
  2. In a food processor, add the drained garbanzo beans, eggs, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, baking powder, baking soda, and salt.
  3. Pulse the mixture until smooth and creamy. Scrape down the sides as needed to ensure all ingredients are well combined.
  4. If using chocolate chips, fold them into the batter at this point.
  5. Pour the batter into the prepared cake pan and spread it evenly using a spatula.
  6. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove from oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
