Ingredients:
- 1 can (15 oz) of garbanzo beans (chickpeas), drained and rinsed
- 3 large eggs
- 1/2 cup almond butter or peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- (Optional) 1/2 cup chocolate chips (dairy-free if desired)
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with cooking spray or line it with parchment paper.
- In a food processor, add the drained garbanzo beans, eggs, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, baking powder, baking soda, and salt.
- Pulse the mixture until smooth and creamy. Scrape down the sides as needed to ensure all ingredients are well combined.
- If using chocolate chips, fold them into the batter at this point.
- Pour the batter into the prepared cake pan and spread it evenly using a spatula.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove from oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
