Ingredients:
- 2 cups (250g) whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup (60ml) unsweetened applesauce
- 1/4 cup (60ml) maple syrup or honey
- 1/2 cup (120ml) almond milk (or milk of choice)
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 2 tablespoons coconut sugar or brown sugar
- 2 tablespoons (30g) unsalted butter, softened (or coconut oil for dairy-free)
- 1 cup (120g) powdered sugar
- 1-2 tablespoons almond milk (or milk of choice)
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
- In a separate bowl, combine applesauce, maple syrup, almond milk, and vanilla.
- Gradually mix wet ingredients into dry until a dough forms.
- On a floured surface, roll out the dough into a rectangle (about 10x12 inches).
- In a small bowl, mix cinnamon and sugar.
- Spread softened butter over the rolled out dough, then sprinkle cinnamon mixture evenly.
- Starting from one edge, carefully roll the dough into a log.
- Cut into 8 equal pieces and place in a greased baking dish or lined with parchment.
- Bake for 12-15 minutes until golden brown and cooked through.
- While baking, whisk together powdered sugar, almond milk, and vanilla until smooth if using frosting.
- Drizzle frosting over warm cinnamon rolls and enjoy!
