Ingredients:

  • 2 cups (250g) whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (60ml) unsweetened applesauce
  • 1/4 cup (60ml) maple syrup or honey
  • 1/2 cup (120ml) almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons (30g) unsalted butter, softened (or coconut oil for dairy-free)
  • 1 cup (120g) powdered sugar
  • 1-2 tablespoons almond milk (or milk of choice)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  3. In a separate bowl, combine applesauce, maple syrup, almond milk, and vanilla.
  4. Gradually mix wet ingredients into dry until a dough forms.
  5. On a floured surface, roll out the dough into a rectangle (about 10x12 inches).
  6. In a small bowl, mix cinnamon and sugar.
  7. Spread softened butter over the rolled out dough, then sprinkle cinnamon mixture evenly.
  8. Starting from one edge, carefully roll the dough into a log.
  9. Cut into 8 equal pieces and place in a greased baking dish or lined with parchment.
  10. Bake for 12-15 minutes until golden brown and cooked through.
  11. While baking, whisk together powdered sugar, almond milk, and vanilla until smooth if using frosting.
  12. Drizzle frosting over warm cinnamon rolls and enjoy!
