Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup warm water (about 110°F)
  • 1 tablespoon olive oil
  • 1 cup pizza sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • Heggies Pepperoni (or regular pepperoni), about half a package, sliced thinly
  • Optional Garnishes: Fresh basil leaves, for garnish; Red pepper flakes, to taste

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the flour, baking powder, and salt. Add warm water and olive oil to the dry ingredients. Mix until a dough forms. Knead on a lightly floured surface for about one minute until smooth.
  2. Preheat Your Oven: Preheat your oven to its highest temperature setting (usually around 475°F or 500°F) and place a pizza stone inside if you have one.
  3. Roll Out the Dough: Divide the dough into eight equal portions. On a floured surface, roll each portion into approximately an inch-thick circle (about six inches in diameter).
  4. Assemble the Pizzas: Place rolled-out dough onto parchment paper or directly onto greased baking sheets. Spread a generous tablespoon of pizza sauce on each mini crust. Sprinkle mozzarella cheese evenly over each sauced crust. Top with slices of Heggies pepperoni.
  5. Bake Mini Pizzas: Carefully transfer pizzas onto your preheated pizza stone or directly into your oven on baking sheets. Bake for about ten minutes or until edges are golden brown and cheese is bubbly.
  6. Garnish & Serve: Remove from oven and let cool slightly before garnishing with fresh basil leaves and red pepper flakes if desired. Slice into quarters if serving as appetizers or enjoy whole!
