Ingredients:

  • 6 large eggs
  • 1 cup milk
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare muffin tin by greasing it with cooking spray or lining it with muffin liners.
  3. In a mixing bowl, whisk together eggs and milk until well combined.
  4. Fold in chopped spinach, shredded cheese, and any optional add-ins (bacon, onions).
  5. Season mixture with salt and pepper to taste.
  6. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes until quiches are puffed and golden brown.
  8. Remove from the oven and let cool slightly before serving.
