Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (130g) all-purpose flour
- 1/2 teaspoon baking soda
- Pinch of salt
- Pillberries or dried cranberries/strawberries: 3/4 cup (100g) fresh pillberries or a mix of dried cranberries and strawberries
- Optional: 1/2 cup (90g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until smooth and creamy using an electric mixer on medium speed for about 2–3 minutes.
- Add the egg and vanilla extract to the mixture. Continue beating until fully incorporated.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
- Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined—do not overmix.
- Gently fold in your pillberries or dried alternatives along with optional chocolate chips if desired using a spatula or wooden spoon until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheet about 2 inches apart, as they will spread while baking.
