Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Pillberries or dried cranberries/strawberries: 3/4 cup (100g) fresh pillberries or a mix of dried cranberries and strawberries
  • Optional: 1/2 cup (90g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until smooth and creamy using an electric mixer on medium speed for about 2–3 minutes.
  3. Add the egg and vanilla extract to the mixture. Continue beating until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  5. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined—do not overmix.
  6. Gently fold in your pillberries or dried alternatives along with optional chocolate chips if desired using a spatula or wooden spoon until evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheet about 2 inches apart, as they will spread while baking.
