Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 3/4 cup milk (or a non-dairy alternative)
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella or feta)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Gradually add milk and stir until just combined.
  5. On a floured surface, roll out the dough to about 1/2 inch thick.
  6. Cut out circles using a cookie cutter or a glass, and place them on the baking sheet.
  7. In a separate bowl, whisk together eggs, spices, cheese, and spinach.
  8. Spoon the egg mixture onto half of the biscuit circles.
  9. Top with remaining biscuit circles to create sandwiches.
  10. Bake for 15-20 minutes until biscuits are golden brown and eggs are set.
  11. Remove from oven and let cool slightly before serving.
