Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, chilled and cubed
- 3/4 cup milk (or a non-dairy alternative)
- 2 cups fresh spinach, chopped
- 4 large eggs
- 1/2 cup shredded cheese (cheddar, mozzarella or feta)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, baking powder, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add milk and stir until just combined.
- On a floured surface, roll out the dough to about 1/2 inch thick.
- Cut out circles using a cookie cutter or a glass, and place them on the baking sheet.
- In a separate bowl, whisk together eggs, spices, cheese, and spinach.
- Spoon the egg mixture onto half of the biscuit circles.
- Top with remaining biscuit circles to create sandwiches.
- Bake for 15-20 minutes until biscuits are golden brown and eggs are set.
- Remove from oven and let cool slightly before serving.
