Ingredients:

  • 2 medium apples (such as Honeycrisp, Braeburn, or Fuji), peeled, cored, and diced (approx. 300g)
  • 2 tablespoons unsalted butter (28g)
  • 2 tablespoons packed light brown sugar (30g)
  • 1 teaspoon ground cinnamon (5g)
  • 1/4 teaspoon ground nutmeg (1g)
  • 1 tablespoon water (15ml)
  • 1 1/2 cups all-purpose flour (180g)
  • 1/4 cup granulated sugar (50g)
  • 2 teaspoons baking powder (8g)
  • 1/4 teaspoon baking soda (1g)
  • 1/4 teaspoon salt (1.5g)
  • 1 cup buttermilk (240ml)
  • 2 large eggs, lightly beaten (approx. 100g)
  • 2 tablespoons unsalted butter, melted and cooled (28g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 cup powdered sugar (120g)
  • 2-3 tablespoons milk (30-45ml)
  • 1/2 teaspoon vanilla extract (2.5ml)

Instructions:

  1. Melt butter in a large skillet over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are tender and slightly caramelized. Add water to deglaze if needed. Remove from heat and let cool slightly.
  2. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. The batter will be lumpy.
  6. Gently fold the slightly cooled apples into the batter.
  7. Drop spoonfuls (about 1/4 cup each) of batter onto the prepared baking sheet, leaving space between each fritter.
  8. Bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  9. Transfer the fritters to a wire rack to cool slightly.
  10. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Add more milk, 1 tablespoon at a time, until the desired consistency is reached.
  11. Drizzle the glaze over the warm fritters.
