Ingredients:
- 1.5 lbs Cod fillets
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp olive oil
- 1 can (400ml) full-fat coconut milk
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp honey
- 1/2 tsp turmeric powder
Instructions:
- Preheat your oven to 400°F (200°C). Pat the cod fillets completely dry with paper towels. Note: Excess water creates steam, which prevents the sauce from clinging.
- Lightly grease your 9x13 inch baking dish with olive oil to stop any sticking.
- In a medium bowl, whisk together the coconut milk, lemon juice, lemon zest, minced garlic, grated ginger, honey, and turmeric. Whisk until the mixture is smooth and the turmeric is fully incorporated.
- Place the cod fillets in the prepared baking dish.
- Season both sides of each fillet with sea salt and cracked black pepper.
- Pour the coconut lemon mixture evenly over the fillets. Ensure they are mostly submerged in the liquid.
- Bake for 20-25 minutes. Wait until the flesh is opaque white and flakes easily with a fork, and you see the sauce bubbling around the edges.
- Remove from the oven and let the fish rest in the sauce for 3 minutes before serving.
