Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 0.5 lb ground pork
  • 3/4 cup panko breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg, beaten
  • 3 cloves fresh garlic, minced
  • 1/4 cup yellow onion, grated
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Combine 3/4 cup panko breadcrumbs and 1/3 cup whole milk in a small bowl. Let this sit for 5 minutes until it forms a thick paste.
  3. Grate 1/4 cup of yellow onion and mince 3 cloves of garlic.
  4. In a large bowl, lightly beat 1 large egg.
  5. Add 1 lb ground beef, 0.5 lb ground pork, and the milk soaked panko to the egg.
  6. Toss in 1/2 cup grated Parmesan, 1/4 cup chopped parsley, 1 tsp dried oregano, 1.5 tsp kosher salt, and 0.5 tsp black pepper.
  7. Mix with your hands until the ingredients are just combined and tacky.
  8. Scoop and roll the mixture into 1.5 inch balls.
  9. Space them evenly on a lined baking sheet.
  10. Bake for 20 minutes until the tops are golden and the centers reach 160°F.
