Ingredients:
- 4 English Muffins, split in half
- 2 tablespoons olive oil
- 400g good quality pork sausages
- 1 medium onion, finely chopped
- 1 tablespoon plain flour
- 300ml beef stock
- 1 teaspoon Worcestershire sauce
- 400g ready-made mashed potato
- 100g cheddar cheese, grated
- Fresh chives, chopped (optional)
- Tomato ketchup or brown sauce (optional)
Instructions:
- Remove sausages from their skins, crumble the meat, and brown in a frying pan. Add chopped onion and cook until softened.
- Sprinkle flour over the sausage and onion mixture. Stir well, then gradually add beef stock and Worcestershire sauce. Simmer until thickened into a gravy.
- Lightly brush English muffin halves with olive oil.
- Spread mashed potato evenly over each muffin half. Top with the sausage and onion gravy.
- Sprinkle grated cheddar cheese generously over the top.
- Place muffin pizzas on a baking sheet and bake in a preheated oven at 200°C (400°F / Gas Mark 6) for 10-12 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh chives, if desired. Serve immediately with ketchup or brown sauce, if you’re so inclined.
