Ingredients:

  • 4 English Muffins, split in half
  • 2 tablespoons olive oil
  • 400g good quality pork sausages
  • 1 medium onion, finely chopped
  • 1 tablespoon plain flour
  • 300ml beef stock
  • 1 teaspoon Worcestershire sauce
  • 400g ready-made mashed potato
  • 100g cheddar cheese, grated
  • Fresh chives, chopped (optional)
  • Tomato ketchup or brown sauce (optional)

Instructions:

  1. Remove sausages from their skins, crumble the meat, and brown in a frying pan. Add chopped onion and cook until softened.
  2. Sprinkle flour over the sausage and onion mixture. Stir well, then gradually add beef stock and Worcestershire sauce. Simmer until thickened into a gravy.
  3. Lightly brush English muffin halves with olive oil.
  4. Spread mashed potato evenly over each muffin half. Top with the sausage and onion gravy.
  5. Sprinkle grated cheddar cheese generously over the top.
  6. Place muffin pizzas on a baking sheet and bake in a preheated oven at 200°C (400°F / Gas Mark 6) for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Garnish with fresh chives, if desired. Serve immediately with ketchup or brown sauce, if you’re so inclined.
