Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 20 oz cauliflower rice
  • 2 tbsp unsalted butter
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 1/2 cup shredded parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice

Instructions:

  1. Heat olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground beef in a flat layer and leave undisturbed for 3-4 minutes to form a brown crust, then break apart and cook until fully browned.
  2. Stir in the diced onion and cook for 3 minutes until translucent. Add minced garlic, smoked paprika, salt, and pepper; sauté for 60 seconds until fragrant.
  3. Push the beef to the sides of the pan and melt the butter in the center. Add the cauliflower rice and sauté until tender-crisp.
  4. Stir in the soy sauce and Worcestershire sauce, tossing the beef and cauliflower together to evenly coat the mixture.
  5. Remove from heat and stir in the shredded parmesan cheese, fresh parsley, and lemon juice before serving.
