Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 20 oz cauliflower rice
- 2 tbsp unsalted butter
- 1 tbsp soy sauce
- 1 tsp Worcestershire sauce
- 1/2 cup shredded parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1 tsp lemon juice
Instructions:
- Heat olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground beef in a flat layer and leave undisturbed for 3-4 minutes to form a brown crust, then break apart and cook until fully browned.
- Stir in the diced onion and cook for 3 minutes until translucent. Add minced garlic, smoked paprika, salt, and pepper; sauté for 60 seconds until fragrant.
- Push the beef to the sides of the pan and melt the butter in the center. Add the cauliflower rice and sauté until tender-crisp.
- Stir in the soy sauce and Worcestershire sauce, tossing the beef and cauliflower together to evenly coat the mixture.
- Remove from heat and stir in the shredded parmesan cheese, fresh parsley, and lemon juice before serving.
