Ingredients:

  • 6 cups (approx. 750g) Frozen mixed berries (strawberries, blueberries, raspberries)
  • ½ cup (100g) Granulated sugar
  • 2 tablespoons (30ml) Lemon juice, freshly squeezed
  • 1 teaspoon (5ml) Vanilla extract
  • 2 tablespoons (15g) Cornstarch
  • 1 box (15.25 oz / 432g) Yellow cake mix
  • ¾ cup (1 ½ sticks / 170g) Unsalted butter, cold and cut into cubes
  • ½ cup (50g) Chopped pecans or walnuts (optional)
  • Pinch of Salt

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, gently toss together frozen berries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Ensure the berries are evenly coated.
  3. Spread the berry mixture evenly across the bottom of the prepared baking dish.
  4. Evenly spread the dry yellow cake mix over the berry filling. Distribute the cold, cubed butter evenly over the cake mix.
  5. Using a pastry blender or fork, cut the butter into the cake mix until it resembles coarse crumbs. Sprinkle with chopped nuts (if using) and a pinch of salt.
  6. Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the berry filling is bubbly. Check after 35 minutes and tent with foil if the topping is browning too quickly.
  7. Let the cake cool for at least 15 minutes before serving.
