Ingredients:
- 6 cups (approx. 750g) Frozen mixed berries (strawberries, blueberries, raspberries)
- ½ cup (100g) Granulated sugar
- 2 tablespoons (30ml) Lemon juice, freshly squeezed
- 1 teaspoon (5ml) Vanilla extract
- 2 tablespoons (15g) Cornstarch
- 1 box (15.25 oz / 432g) Yellow cake mix
- ¾ cup (1 ½ sticks / 170g) Unsalted butter, cold and cut into cubes
- ½ cup (50g) Chopped pecans or walnuts (optional)
- Pinch of Salt
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, gently toss together frozen berries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Ensure the berries are evenly coated.
- Spread the berry mixture evenly across the bottom of the prepared baking dish.
- Evenly spread the dry yellow cake mix over the berry filling. Distribute the cold, cubed butter evenly over the cake mix.
- Using a pastry blender or fork, cut the butter into the cake mix until it resembles coarse crumbs. Sprinkle with chopped nuts (if using) and a pinch of salt.
- Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the berry filling is bubbly. Check after 35 minutes and tent with foil if the topping is browning too quickly.
- Let the cake cool for at least 15 minutes before serving.
