Ingredients:

  • 1.5 lbs bone-in chicken thighs, skinless, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 medium tomatoes, pureed (about 1 cup)
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust for heat)
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ½ teaspoon cumin seeds
  • ¼ teaspoon black pepper powder
  • Fresh cilantro, chopped for garnish (optional)

Instructions:

  1. In a bowl, combine chicken pieces with turmeric, red chili powder, and salt. Let sit for 10 minutes.
  2. Heat oil in a large skillet over medium-high heat until shimmering.
  3. Add sliced onions and sauté until golden brown (about 8-10 minutes).
  4. Stir in garlic and ginger; sauté for 1-2 minutes until fragrant.
  5. Add pureed tomatoes, cook until oil separates (about 5-7 minutes).
  6. Add marinated chicken pieces and cook over high heat, stirring occasionally until browned (about 10 minutes).
  7. Sprinkle in coriander powder, cumin seeds, garam masala, and black pepper. Stir to combine.
  8. Reduce heat to low, cover, and cook for an additional 10-12 minutes, stirring occasionally until the chicken is fully cooked.
  9. Adjust seasoning if needed, garnish with freshly chopped cilantro, and serve hot.
