- 2 tablespoons vegetable oil
- 1 large onion, finely sliced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 2 medium tomatoes, pureed (about 1 cup)
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust for heat)
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- ½ teaspoon cumin seeds
- ¼ teaspoon black pepper powder
- Fresh cilantro, chopped for garnish (optional)
Instructions:
- In a bowl, combine chicken pieces with turmeric, red chili powder, and salt. Let sit for 10 minutes.
- Heat oil in a large skillet over medium-high heat until shimmering.
- Add sliced onions and sauté until golden brown (about 8-10 minutes).
- Stir in garlic and ginger; sauté for 1-2 minutes until fragrant.
- Add pureed tomatoes, cook until oil separates (about 5-7 minutes).
- Add marinated chicken pieces and cook over high heat, stirring occasionally until browned (about 10 minutes).
- Sprinkle in coriander powder, cumin seeds, garam masala, and black pepper. Stir to combine.
- Reduce heat to low, cover, and cook for an additional 10-12 minutes, stirring occasionally until the chicken is fully cooked.
- Adjust seasoning if needed, garnish with freshly chopped cilantro, and serve hot.
