Ingredients:

  • 1 large head Bibb lettuce, washed and torn into bite-sized pieces (about 8 cups or 200g)
  • 1 medium cucumber, thinly sliced (about 150g)
  • 1 cup cherry tomatoes, halved (about 150g)
  • ½ cup thinly sliced red onion (about 50g)
  • ½ cup toasted walnuts or pecans, roughly chopped (about 60g)
  • ¼ cup extra virgin olive oil (60ml)
  • 2 tablespoons honey (30g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 teaspoon Dijon mustard (5g)
  • Salt and black pepper to taste

Instructions:

  1. Tear the Bibb lettuce into bite-sized pieces and place it in a large bowl.
  2. Layer in the sliced cucumbers, halved cherry tomatoes, and red onion over the lettuce.
  3. In a small bowl or jar, combine olive oil, honey, lemon juice, Dijon mustard, salt, and pepper. Whisk or shake vigorously until well combined.
  4. Drizzle the vinaigrette over the salad and gently toss until everything is coated.
  5. Scatter the toasted nuts on top of the salad for crunch.
  6. Serve immediately for a fresh and vibrant dish.
