Ingredients:
- 1 large head Bibb lettuce, washed and torn into bite-sized pieces (about 8 cups or 200g)
- 1 medium cucumber, thinly sliced (about 150g)
- 1 cup cherry tomatoes, halved (about 150g)
- ½ cup thinly sliced red onion (about 50g)
- ½ cup toasted walnuts or pecans, roughly chopped (about 60g)
- ¼ cup extra virgin olive oil (60ml)
- 2 tablespoons honey (30g)
- 2 tablespoons fresh lemon juice (30ml)
- 1 teaspoon Dijon mustard (5g)
- Salt and black pepper to taste
Instructions:
- Tear the Bibb lettuce into bite-sized pieces and place it in a large bowl.
- Layer in the sliced cucumbers, halved cherry tomatoes, and red onion over the lettuce.
- In a small bowl or jar, combine olive oil, honey, lemon juice, Dijon mustard, salt, and pepper. Whisk or shake vigorously until well combined.
- Drizzle the vinaigrette over the salad and gently toss until everything is coated.
- Scatter the toasted nuts on top of the salad for crunch.
- Serve immediately for a fresh and vibrant dish.
