Ingredients:

  • 2 cups fresh raspberries (about 250g)
  • 1 cup water (240ml)
  • 2 tablespoons granulated sugar (adjust for sweetness preference)
  • Juice from 1 large lemon
  • 1 teaspoon bitter orange peel or dried bitters (for bitterness—adjust based on preference)
  • A few sprigs of mint leaves (optional, for garnish)

Instructions:

  1. - Rinse the fresh raspberries under cold water to remove any dirt or pesticides. Gently pat them dry with a paper towel.
  2. - In a blender, combine the rinsed raspberries, water, sugar, and lemon juice. If using dried bitters instead of bitter orange peel, add it at this stage. Blend on high speed until smooth and well combined.
  3. - Place a fine-mesh strainer over a bowl or pitcher to strain out the seeds and pulp. Pour the blended mixture through the strainer using a spatula to help push as much liquid through as possible.
  4. - If you opted for bitter orange peel, add it now to infuse more bitterness into your juice. Let it sit for about five minutes before removing it to allow flavors to develop.
  5. - Taste your raspberry juice; if you prefer it sweeter, gradually mix in additional sugar until desired sweetness is reached.
  6. - Transfer your raspberry bitter juice into serving glasses or an airtight container and refrigerate until chilled (at least one hour).
  7. - Serve chilled over ice with mint leaves as garnish if desired.
