Ingredients:

  • 1 pound (450g) fresh strawberries, washed and thoroughly dried
  • 12 ounces (340g) good quality white chocolate chips
  • 1 teaspoon (5ml) vegetable shortening or coconut oil (optional)
  • 1/4 cup (40g) mini chocolate chips or melted dark chocolate (for the eyes)
  • Optional: White sprinkles or edible glitter for extra sparkle

Instructions:

  1. Wash and thoroughly dry the strawberries. Pat dry with paper towels. Leaving the green stem intact aids in dipping.
  2. Melt the white chocolate and shortening (if using) using a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth. Avoid overheating.
  3. Dip each strawberry into the melted white chocolate, swirling to ensure full coverage. Allow excess chocolate to drip off.
  4. Place the dipped strawberries on parchment paper or a silicone mat. Chill in the refrigerator for 5-10 minutes to allow the chocolate to set slightly but not become rock hard.
  5. Transfer melted dark chocolate to a small piping bag or Ziploc bag with a tiny hole cut in one corner. Pipe two small dots for eyes on each strawberry. Alternatively, gently press mini chocolate chips into the chocolate before it sets.
  6. While the chocolate is still slightly wet, sprinkle with white sprinkles or edible glitter for extra sparkle (optional).
  7. Return the strawberries to the refrigerator to fully set for another 5-10 minutes. Enjoy these ghost strawberries!
