Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup cooked, chopped asparagus
  • 1/2 cup shredded Parmesan cheese
  • 8 ounces Brie cheese, rind removed
  • 2 tablespoons fresh chives, finely chopped
  • pinch of paprika (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C) and prepare muffin tin with cooking spray or liners.
  2. Cook chopped asparagus in a sauté pan over medium heat until tender (about 3-5 minutes). Set aside.
  3. In a large bowl, whisk together flour, baking powder, salt, pepper, and garlic powder until well combined.
  4. In another bowl, whisk together milk, vegetable oil, and eggs.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  6. Carefully fold in cooked asparagus and Parmesan cheese until evenly distributed.
  7. Spoon batter into muffin cups, filling each about 2/3 full.
  8. Place a piece of Brie on top of each muffin.
  9. Bake in the preheated oven for 15 minutes, or until muffins are golden brown.
  10. Set the oven to broil and cook for an additional 2-3 minutes, until Brie is bubbly and golden brown.
  11. Let muffins cool slightly before removing from the tin. Garnish with fresh chives and sprinkle with paprika, if desired.
