Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup cooked, chopped asparagus
- 1/2 cup shredded Parmesan cheese
- 8 ounces Brie cheese, rind removed
- 2 tablespoons fresh chives, finely chopped
- pinch of paprika (optional)
Instructions:
- Preheat the oven to 375°F (190°C) and prepare muffin tin with cooking spray or liners.
- Cook chopped asparagus in a sauté pan over medium heat until tender (about 3-5 minutes). Set aside.
- In a large bowl, whisk together flour, baking powder, salt, pepper, and garlic powder until well combined.
- In another bowl, whisk together milk, vegetable oil, and eggs.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined.
- Carefully fold in cooked asparagus and Parmesan cheese until evenly distributed.
- Spoon batter into muffin cups, filling each about 2/3 full.
- Place a piece of Brie on top of each muffin.
- Bake in the preheated oven for 15 minutes, or until muffins are golden brown.
- Set the oven to broil and cook for an additional 2-3 minutes, until Brie is bubbly and golden brown.
- Let muffins cool slightly before removing from the tin. Garnish with fresh chives and sprinkle with paprika, if desired.
