Ingredients:

  • 4 bratwurst sausages (approximately 1 pound or 450 g)
  • 4 hoagie rolls or crusty baguettes
  • 1 cup sauerkraut, drained and warmed (approximately 150 g)
  • 1 whole head of garlic
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • Mustard (optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Cut the top off the garlic head to expose cloves. Drizzle olive oil over the exposed cloves, then wrap in foil. Roast garlic in the oven for 30-35 minutes, until soft and caramelized.
  2. Increase oven heat to broil. Place bratwurst on a broiler-safe pan or grill rack. Broil for approximately 6-8 minutes on each side, until browned and cooked through (internal temperature reaches 160°F or 70°C).
  3. Slice the hoagie rolls open. Squeeze out roasted garlic into a small bowl and mash with a fork. Spread roasted garlic evenly on the inside of rolls. Place bratwurst in the rolls and top with warmed sauerkraut. Add mustard if desired.
  4. Garnish with fresh parsley, if using, and serve immediately.
