Ingredients:
- 2 large red bell peppers (approximately 500g)
- 1 cup cream cheese, softened
- ½ cup sour cream
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 French baguette, sliced into rounds
- 1 cup assorted fresh vegetables (carrots, celery, cucumber, bell peppers)
- ½ cup pretzel crisps or pita chips
Instructions:
- Preheat the broiler. Place the red peppers on a baking sheet and broil for 20-25 minutes, turning occasionally until the skin is charred and blistered.
- Remove from the oven, cover with foil, and let them steam for 10 minutes. Peel off the skins and remove seeds.
- In a food processor, combine the roasted red peppers, softened cream cheese, sour cream, mozzarella cheese, olive oil, garlic powder, smoked paprika, salt, and pepper. Blend until smooth and creamy.
- Transfer the dip mixture to a baking dish. Broil for an additional 5-7 minutes until bubbling and slightly browned on top.
- While the dip is broiling, arrange sliced baguette, fresh vegetables, and chips on a serving platter.
- Remove the dip from the oven and let it cool slightly before serving. Serve warm with the assorted dippers.
