Ingredients:
- 12 whole wheat crackers
- 12 ounces Brie cheese, cut into 12 small wedges
- 6 tablespoons apricot preserves
- 12 slices of fresh apricot, or 6 canned apricot halves, halved
- Fresh thyme leaves, for garnish (optional)
Instructions:
- Preheat your broiler to high.
- Line a baking sheet with parchment paper for easy cleanup (optional).
- Place one cracker on each spot on the baking sheet.
- Top each cracker with a wedge of Brie cheese.
- Add a small spoonful of apricot preserves on top of the Brie.
- Place a slice of fresh apricot (or half of a canned apricot) on top of the preserves.
- Place the baking sheet under the broiler and broil for 3-5 minutes, or until the Brie is melty and bubbly.
- Remove from the oven, let cool slightly, and garnish with fresh thyme leaves if desired.
- Serve warm.
