Ingredients:

  • 12 whole wheat crackers
  • 12 ounces Brie cheese, cut into 12 small wedges
  • 6 tablespoons apricot preserves
  • 12 slices of fresh apricot, or 6 canned apricot halves, halved
  • Fresh thyme leaves, for garnish (optional)

Instructions:

  1. Preheat your broiler to high.
  2. Line a baking sheet with parchment paper for easy cleanup (optional).
  3. Place one cracker on each spot on the baking sheet.
  4. Top each cracker with a wedge of Brie cheese.
  5. Add a small spoonful of apricot preserves on top of the Brie.
  6. Place a slice of fresh apricot (or half of a canned apricot) on top of the preserves.
  7. Place the baking sheet under the broiler and broil for 3-5 minutes, or until the Brie is melty and bubbly.
  8. Remove from the oven, let cool slightly, and garnish with fresh thyme leaves if desired.
  9. Serve warm.
