Ingredients:

  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • Lime wedges (optional)

Instructions:

  1. Preheat the broiler to high and lightly grease a baking dish.
  2. In a large bowl, combine the black beans, corn, red bell pepper, and red onion. Season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Stir well to combine.
  3. Spoon the mixture into the prepared baking dish, spreading it evenly.
  4. Place the baking dish under the broiler for 10 minutes or until the vegetables are tender and slightly charred.
  5. Remove the dish from the oven, sprinkle the cheddar cheese on top, and return to the broiler for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and sprinkle with fresh cilantro. Serve with optional garnishes like avocado and lime wedges.
