Ingredients:
- 2 (15 oz) cans black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ¼ cup fresh cilantro, chopped
- 1 avocado, sliced (optional)
- Lime wedges (optional)
Instructions:
- Preheat the broiler to high and lightly grease a baking dish.
- In a large bowl, combine the black beans, corn, red bell pepper, and red onion. Season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Stir well to combine.
- Spoon the mixture into the prepared baking dish, spreading it evenly.
- Place the baking dish under the broiler for 10 minutes or until the vegetables are tender and slightly charred.
- Remove the dish from the oven, sprinkle the cheddar cheese on top, and return to the broiler for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh cilantro. Serve with optional garnishes like avocado and lime wedges.
