Ingredients:
- 2 large English muffins, split (about 200g)
- 1 tablespoon olive oil (15ml)
- 1/2 teaspoon salt (2g)
- 1/4 teaspoon black pepper (1g)
- 1/4 cup bell pepper, diced (40g)
- 1/4 cup zucchini, diced (30g)
- 1/4 cup mushrooms, diced (30g)
- 1 clove garlic, minced (3g)
- 1 cup shredded mozzarella cheese (120g)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat the Broiler by setting the ovens broiler to high heat.
- Prepare the English muffins by placing them on a baking sheet, cut side up. Brush with olive oil and sprinkle with salt and pepper.
- Sauté the vegetables in a mixing bowl by combining diced bell pepper, zucchini, mushrooms, and minced garlic. Optionally, sauté vegetables in a pan over medium heat with a drizzle of olive oil for 3-5 minutes until softened.
- Assemble the muffins by evenly distributing the sautéed vegetables over the oiled muffins. Top with shredded mozzarella cheese.
- Broil by placing the baking sheet under the broiler for 5-7 minutes, or until the cheese is bubbly and golden brown.
- Serve by removing from the oven and letting cool slightly. Garnish with fresh basil leaves before serving.
