Ingredients:

  • 2 large English muffins, split (about 200g)
  • 1 tablespoon olive oil (15ml)
  • 1/2 teaspoon salt (2g)
  • 1/4 teaspoon black pepper (1g)
  • 1/4 cup bell pepper, diced (40g)
  • 1/4 cup zucchini, diced (30g)
  • 1/4 cup mushrooms, diced (30g)
  • 1 clove garlic, minced (3g)
  • 1 cup shredded mozzarella cheese (120g)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat the Broiler by setting the ovens broiler to high heat.
  2. Prepare the English muffins by placing them on a baking sheet, cut side up. Brush with olive oil and sprinkle with salt and pepper.
  3. Sauté the vegetables in a mixing bowl by combining diced bell pepper, zucchini, mushrooms, and minced garlic. Optionally, sauté vegetables in a pan over medium heat with a drizzle of olive oil for 3-5 minutes until softened.
  4. Assemble the muffins by evenly distributing the sautéed vegetables over the oiled muffins. Top with shredded mozzarella cheese.
  5. Broil by placing the baking sheet under the broiler for 5-7 minutes, or until the cheese is bubbly and golden brown.
  6. Serve by removing from the oven and letting cool slightly. Garnish with fresh basil leaves before serving.
