Ingredients:

  • 6 slices (approx. 6 oz / 170g) sprouted whole-grain bread
  • 3 tbsp (45ml) avocado oil mayonnaise
  • 1 lb (450g) lean smoked turkey breast, thinly sliced
  • 6 oz (170g) Gruyère cheese, shredded
  • 1 tbsp (15ml) fresh parsley, finely chopped
  • ½ tsp (2.5ml) cracked black pepper

Instructions:

  1. Preheat your oven broiler to high and line a baking sheet with parchment paper.
  2. Arrange the whole-grain bread slices on the pan and spread exactly ½ tbsp (7.5ml) of avocado oil mayonnaise evenly across each slice.
  3. Place the bread under the broiler for 1–2 minutes until the edges are just beginning to turn golden.
  4. Remove the pan from the oven and layer 2–3 oz (60–85g) of the smoked turkey on each slice, folding the slices to create height.
  5. Top each turkey mound with 1 oz (28g) of shredded Gruyère cheese, ensuring the cheese covers the edges of the meat.
  6. Return the pan to the top rack and broil for 3–5 minutes until the cheese is bubbling and exhibits mahogany-colored spots.
  7. Remove from oven and immediately garnish with cracked black pepper and fresh parsley.
