Ingredients:
- 4 slices sourdough bread (thick cut, approximately 1/2 inch each, 200g total)
- 8 ounces (225g) turkey breast, thinly sliced
- 1 ripe avocado (about 8 ounces/225g)
- 2 tablespoons mayonnaise (30g)
- 1 teaspoon Dijon mustard (5g)
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (about 120g)
- Fresh arugula or spinach, for topping
- Optional: Slices of tomato
Instructions:
- Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, then stir in mayonnaise, Dijon mustard, salt, and pepper.
- Lay out the sourdough slices on a baking sheet. Spread the avocado mixture evenly over two slices. Layer the turkey slices on top of the avocado. Sprinkle shredded cheddar cheese over the turkey. Top with the remaining two slices of sourdough.
- Place the baking sheet under the broiler. Broil for 5-7 minutes, or until the cheese is bubbly and golden brown. Keep an eye on the sandwiches to prevent burning.
- Remove from oven, let cool slightly, and cut sandwiches in half. Garnish with fresh arugula or spinach. Optionally add tomato slices before serving.
