- 1/4 cup (60 ml) milk
- 1 large egg, beaten
- 1/4 cup (40 g) finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) black pepper
- 1 teaspoon (5 g) dried oregano
- 1/4 teaspoon (1 g) crushed red pepper flakes (optional)
- 1 cup (150 g) fresh pineapple, diced
- 1/4 cup (30 g) red bell pepper, finely diced
- 1/4 cup (30 g) red onion, finely diced
- 1 tablespoon (15 g) fresh cilantro, chopped
- 1 tablespoon (15 ml) lime juice
- 1/4 teaspoon (1 g) salt
- 1/4 teaspoon (1 g) black pepper
Instructions:
- Preheat the Broiler: Set your oven to broil at a medium-high setting.
- Prepare Turkey Mixture: In a mixing bowl, combine ground turkey, breadcrumbs, milk, beaten egg, onion, garlic, salt, pepper, oregano, and red pepper flakes. Mix until just combined.
- Shape Muffins: Grease muffin tin or line with muffin liners. Evenly distribute turkey mixture into each muffin cup, pressing down slightly to shape.
- Prepare Pineapple Salsa: In a separate bowl, combine diced pineapple, red bell pepper, red onion, cilantro, lime juice, salt, and pepper. Mix thoroughly and let rest for 10 minutes.
- Broil Turkey Muffins: Place muffin tin under the broiler, cooking for about 10-15 minutes, or until muffins are cooked through and internal temperature reaches 165°F (74°C).
- Serve: Carefully remove muffins from the oven and let cool for a minute. Top each muffin with a generous spoonful of Pineapple Delight Salsa before serving.
