Ingredients:

  • 3/4 cup (170g) unsalted butter
  • 15 oz (425g) pumpkin puree
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) coconut sugar
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 2 tsp (5g) pumpkin pie spice
  • 2 large (100g) eggs
  • 1/4 cup (60ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Place the butter in a stainless steel skillet over medium heat. Melt and cook, stirring constantly, until foam subsides and small brown specks appear and a nutty aroma develops. Remove from heat immediately and stir in the pumpkin puree to emulsify.
  2. In a large bowl, whisk together the all-purpose flour, coconut sugar, baking soda, salt, and pumpkin pie spice.
  3. In a separate small bowl, beat the eggs, maple syrup, and vanilla extract.
  4. Pour the egg mixture into the brown butter and pumpkin mixture, stirring until smooth, then fold in the dry ingredients until no streaks of flour remain.
  5. Line a 9x5 inch loaf pan with parchment paper. Pour in the batter and smooth the top.
  6. Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
