Ingredients:
- 3/4 cup (170g) unsalted butter
- 15 oz (425g) pumpkin puree
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) coconut sugar
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (5g) pumpkin pie spice
- 2 large (100g) eggs
- 1/4 cup (60ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
Instructions:
- Place the butter in a stainless steel skillet over medium heat. Melt and cook, stirring constantly, until foam subsides and small brown specks appear and a nutty aroma develops. Remove from heat immediately and stir in the pumpkin puree to emulsify.
- In a large bowl, whisk together the all-purpose flour, coconut sugar, baking soda, salt, and pumpkin pie spice.
- In a separate small bowl, beat the eggs, maple syrup, and vanilla extract.
- Pour the egg mixture into the brown butter and pumpkin mixture, stirring until smooth, then fold in the dry ingredients until no streaks of flour remain.
- Line a 9x5 inch loaf pan with parchment paper. Pour in the batter and smooth the top.
- Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
